Malaysian Fried Meehon (Noodles)

This recipe is quick, easy and delicious and comes from a Malaysian friend who is a fabulous cook. Have all ingredients ready as the preparation time is very quick.

Ingredients:

½ lb. rice vermicelli noodles
cabbage, bean sprouts or leafy greens
½ a small onion chopped
prawns or meat as desired
1 T  oil
5 T  tomato ketchup
2 T oyster sauce
1 T  vinegar
½ T chili paste ( optional )
½ T sugar
1 T soy sauce
chopped coriander leaves / scallions for garnish.

Directions:

Put the rice vermicelli in a saucepan of boiling water and
leave on the fire for 5-7 minutes. Less time if the noodles
are very fine.

Remove from the fire, strain the noodles and run under cold
water for 30 seconds.

Heat the oil in a wok or frying pan and add the chopped
onion.

Fry for about 2 minutes then add prawns or meat.
After a few minutes add tomato ketchup, oyster sauce,
vinegar, chili paste, sugar and soy sauce.

Adjust to taste.

Add vegetables ( bean sprouts, cabbage, or green veggies )

Add noodles. Mix well and stir until noodles are cooked.

Serve garnished with chopped coriander leaves, scallions or
crisp fried onions ( sold in Asian food supermarkets).

Serves 4-6 persons.
